It is the best known creamy sauce in the world, a symbol of traditional Ligurian gastronomy, cold produced according to the classic recipe handed down for generations and protected by the Consortium of the same name (beware of the words Pesto alla Genovese or Pesto Ligure) and whose basic ingredient is only the Basilico Genovese DOP, recognizable by the Consortium brand shown on the label.
It is made by shredding and cold mixing the ingredients without any heat treatment. Preservation is ensured by vacuum sealing and acidification with natural products.
